These little salad tacos are so addictive, and they take quite awhile to eat, which makes the meal last longer. I’m a big fan of long, lingering meals, but I try to make sure I linger over healthy food. Raw veggies take a long time to chew, and their fresh crunch is very satisfying. I added a baked winter squash and some sliced baked beets for some warmth.

What better way to spend an evening with girlfriends than to make fresh juice? Saturday evening I was invited to my girl Becky’s house to do a bit of experimenting with fruits and vegetables. The house was busy. While Becky, Kat and I were in the kitchen, fresh apple pies were baking, organic tea was brewing, and board games were played. We hid out in the kitchen, cleaning fruits and vegetables, chatting and making delicious vegetable juice. We drank so much juice that I was a bit afraid the button on my jeans would pop, but I woke up feeling fresh, clean and nourished. Nothing like a bit of experimenting to get the creative juices flowing. Here are a few we liked best:
